RECIPE BELOW:

Usage: Adults take 1/2 to 1 tbsp daily. Children should take 1/2 to 1 tsp.

Directions:

1 cup of elderberries & herbs /  contents of bag

4 cups cold water (distilled, purified, or spring water works best)

1 cup raw, local honey (or organic maple syrup or agave for a vegan/infant-friendly recipe); double the amount of sweetener to increase shelf life if not using stabilzer.

1 cup vodka or brandy or 1/2 cup of apple cider vinegar (optional to increase shelf life)

Put berries in bag (or use later to strain) or put the herbs right into the cold water in pot and bring to a boil. Reduce heat and allow herbs to simmer for 30 to 40 minutes. Remove from heat and let steep 1 hour. Strain berries and herbs using supplied bag or with doubled cheesecloth  (be careful, liquid may still be hot, I like to use gloves to avoid turmeric staining). Discard used herbs in compost. Once liquid has cooled to just above room temperature, add honey and stir to incorporate.  If using vodka, brandy or vinegar, add here and stir until well combined. Bottle in sterilized glass and store in the refrigerator for up to 2-3 months but mine is usually gone by then.

Tip: try using an instapot on soup setting, leave the lid on and let it cool overnight before adding the honey and stabilizer.

If you like the consistency to be even thicker add one cup less of the water.
